If you are employing people to work for you the most crucial document that you will need to have is a Contract of Employment.   This is a document that you will refer to again and again and often incorporates links to a handbook or other policies.    It's not just what's written in a contract that matters as what you do i.e.  "custom and practice",  can become contractual over time.
